Recipe 1: Ready to Cook Banana Stem Payasa (Kheer or Payasam)

Popularly known as payasa (Payasam) in South India and kheer in North India, this mouth-watering dessert is loaded with sweetness and enriched with milk, nuts, and fruits. Usually, payasam is made on auspicious occasions as an offering to God. As a banana stem is a healthy vegetable, we can prepare this healthy sweet with the banana stem.

Ingredients [for serving four people]
  • 1 Packet Ready to Cook Banana Stem (250 Grams)
  • 1/2 cup milk
  • 1/2 cup sugar
  • 3/4 cup Grated coconut or ½ cup of coconut milk
  • 1/8 tsp cardamom powder
  • 8 nos Cashews
  • 6 nos Almond (Badam)
  • 8 nos Dry Grapes
  • 1 tbsp Melted Ghee
Method of Preparation
  • Take one packet (250 grams) of Ready to Cook Banana Stem and put it into the pressure cooker.
  • Put ½ cup of milk into it and boil for 3-4 whistles.
  • Add cashews, grated coconut (or coconut milk), badam, and cardamom powder into a mixer jar for grinding, and add little water.
  • Then transfer cooked banana stem with milk into a Kadhai, and add grinded ingredients into it.
  • Add sugar into Kadai and boil for 10 minutes.
  • Then transfer it into a bowl. Garnish with roasted cashews and grapes.

Your healthy banana stem payasa is ready to serve.

Recipe 2: Jain Style Masala (Stuffing) for Masala Dosa - Without Potato, Onion & Garlic

Mysore masala dosa is very famous in south India and Mumbai. Usually, dosa is served with Mysore masala which is prepared with Potato, Onion, and Garlic. But many people are not eating Potato, Onion, and Garlic. So we are showcasing how to prepare Mysore masala with Banana stem. This is easy to cook and healthy to eat. Presently most of the restaurants are preparing masala with raw banana, we are using banana stem (Pseudo Stem) as the main ingredients. The taste is almost matching with normal Mysore masala prepared with Potato.

Ingredients [for serving four people]
  • 250 Grams Ready to Cook Banana Stem
  • 1 tbsp oil
  • 1/2 tbsp. mustard seed
  • 1/2 tbsp. chana dal split
  • 7-8 curry leaves
  • 2 green chillies finely chopped
  • 1/4 tbsp. turmeric powder
  • 1/2 tbsp. lime juice
Method of Preparation
  • First boil Ready to cook banana stem in a cooker for 4 whistles, add little salt also.
  • Heat 1 tablespoon of oil in a non-stick pan, add mustard seeds, Chana dal, and let them splutter. Add curry leaves, turmeric powder & green chilli. Add these to the boiled banana stem and mash the mixture with a masher.
  • Then add lime juice and mix well. Transfer it into a serving bowl.
  • Add grated coconut (Optional)
  • Prepare the dosa with the stuffing of banana stem masala and your healthy dosa is ready to serve.

Recipe 3: Banana Stem Chutney

Ready to Cook Banana Stem is a healthy nutrient-rich vegetable. Chutney can be served as a side dish for lunch or with dosas & idlis.

Ingredients [to serve four people]
  • 250 grams Ready to Cook Banana Stem
  • 3/4 cup grated coconut
  • 2 Green Chillies
  • 1/2 lemon sized tamarind
  • Salt to taste
  • 1/4 teaspoon mustard seeds
  • 1 pinch crystal asafoetida
  • For seasoning- 1.5 tablespoons oil, 1/4 teaspoon mustard seeds, 1/4 teaspoon urad dal, 1 leaflet of curry leaves, 1 dried red chilli, and as per taste Asafoetida powder.
Method of Preparation
  • Grind grated coconut along with green chillies, tamarind, salt, mustard seeds, crystal asafoetida soaked in a teaspoon of water, into a coarse paste using as little water as possible.
  • Add in Ready to Cook Banana Stem & grind them into a paste. You can keep the chutney consistency a little coarse & not grind it into a fine paste.
  • Transfer this dry banana chutney into a bowl & season it.
  • Seasoning: Heat oil in a tempering pan, add in mustard seeds. When they start popping, add in urad dal & them sizzle for few seconds. Add in pieces of dried red chilli, curry leaves, a generous amount of asafoetida powder.
  • Once urad dal has started to brown, add this seasoning to the chutney in the bowl & mix well.

Recipe 4: Banana Stem Curd Curry (Pachadi)

Pachadi Recipe is tasty raita made with banana stem. It is a quick and easy recipe. You can serve it along with rice and dal for a comforting meal.

Ingredients [to serve three people]
  • 250 Grams Ready to Cook Banana Stem
  • 1 cup thick curd (whisked)
  • salt to taste
  • For tempering- 1 teaspoon oil (Groundnut oil or any), 1/2 teaspoon mustard seeds, 1/4 teaspoon urad dal/split and husked black gram, 2 green chillies (roughly chopped, adjust according to taste), and some sprig curry leaves (roughly torn).
Method of Preparation
  • Heat a kadhai/pan with oil and temper with ingredients given under 'For tempering'.
  • Take Ready to Cook banana stem and add it to the kadhai.
  • Add salt and cook by stirring continuously for just one minute on high flame and switch off.
  • Transfer it to a serving bowl.
  • Once cooled, add thick curd and mix well.

Your healthy and delicious Pachadi is ready to be served.
