FOXTAIL MILLET - THE TRADITIONAL GRAIN!
Foxtail millet is one of the oldest cultivated millets and the most grown millet species in Asia. Three to four decades ago, foxtail millet was consumed as the staple food and is amongst the healthiest of grains available today. It has double the quantity of protein content compared to rice. Moreover, the grain and its flours are naturally gluten-free and a great alternative to rice and wheat in most recipes. Interestingly, it is a host of multiple other essential nutrients like fibre, protein, calcium, and vitamins with a sweet nutty flavor and is considered to be one of the most digestible among other grains. It is a nutritive food for children and pregnant women as it is enriched with antioxidants, iron, zinc, magnesium, copper, and vitamin B. These little grains also help in strengthening muscles, bones and improving immunity. They are easy to cook and can be adapted to various Indian recipes.
Ingredients:
1. Foxtail millet flour – 80g
2. Flax seeds – 100g
3. Jaggery – 100g
4. Ghee - 40g
5. Almonds – 10g
6. Cashew nuts – 10g
7. Raisins – 10g
8. Cardamom pods – 6g
Preparation Method:
1. Roast each ingredient (foxtail flour, dry fruits) separately in ghee.
2. Take another pan and dry roast the flax seeds.
3. Add foxtail millet flour, flax seeds, dry fruits, cardamom pods, and jaggery and mix well in a blender thoroughly.
4. Prepare lemon size balls with moist hands.
5. Foxtail millet flax seeds Laddus are ready to serve.
